Around the time I started cooking every day, I discovered Jacques Pepin. Around that time was the advent of his “Fast Food My Way” and his PBS series by the same name. It was hearing about Jacques Pepin that I began to learn to appreciate the cooking of Julia Child but even more, I learned the good food needn’t be complicated. You just need to use good ingredients and in a mindful way. The very first recipe I made of Jacques’ became my favorite. It was a very easy vegetable soup with grated vegetables and a very little bit of coucous served over melty cheese. It still is my go to recipe when I’m short on time, need an easy accompaniment, am sick, am homesick, am seriously hungry and serve it with bread, …. it serves all purposes.
